First thing to consider in making this decision is, were you planning on getting another vehicle in the very near future? If the answer to this question is yes then you have to ask the second question. And that is were you going to use the vehicle as a trade in on that next vehicle? If the answer to that is yes then you have to answer a third question. Can you afford to buy another vehicle without using this vehicle as a trade in? But in most all cases the answer to one or all of those three questions is great big NO! So let us look at what the reason to ask these questions and what they have to do with the original question. The first question is answered no 98% of the time. Why is that? Because most of the time we have no reason to get a new vehicle when the one we are driving is working fine. So if you had no intention of buying another vehicle before your vehicle broke down, why would you suddenly need to buy one now? Unless you are going to go out and buy a brand new vehicle or one that is still under a factory warranty, what are you really doing? You are going to get rid of your vehicle that you know everything about and has been a trusted mode of transportation, for one that you know nothing about and may have more problems than your current vehicle. If it does have more problems that were hidden and it starts breaking down. You will have spent the money you could have fixed that old trust friend with and now have to start putting money into this vehicle. By the time you are done you could be spending much more than if you had just replaced the engine in your original vehicle.

The second question is not answered no to as often as the first question, because if you have answer no to the first question, you had no intention of trading this vehicle in. So if you have answer no because you were not thinking of trading it in, then why would you suddenly want to get another vehicle just because it is expensive to replace the engine. But for all same reasons above the investment in your current vehicle will usually be the a better decision than writing it off.

Finally the answer to the third question is no at least as often as the first question. And if you can afford to buy the vehicle without a trade in and you are planning on buying a brand new vehicle, then writing off this vehicle may be your best decision. But if you are just going to buy some other used vehicle then again we go back to all of the reasons in question one why you should make the investment in your current vehicle. You can not buy any reliable vehicle for less money than it will cost you to put a rebuilt exchange engine into your current vehicle. Sometimes the idea of buying another vehicle is more appealing than fixing the current vehicle. Maybe your eyes are just tired of looking through that same windshield or your seat is tired of sitting in that seat.

Three Steps to Cooking Perfect Steak on Your Outdoor BBQ Grill

If you're like me, When you crank up that BBQ grill for the season it's all about cooking perfect steak. I love all kinds of foods cooked on an outside bbq grill, but none says summer quite like that sweet smell of steak on the grill. For me, the results are always predictable and always pretty close to perfect. This is because I use the same process every time and I start with the end result in mind. So that's my first tip: cooking perfect steak starts with identifying what that means to you and then learning about the basic cooking method so that you can navigate to that desired point. You'll have to decide on the definition of perfection for yourself - that's the fun part. But the next few paragraphs should help with the second part - learning the process and the basic cooking method that helps get you to your perfection.

It All Starts BEFORE Cooking Tenderloin!

For most carnivores, the beginning of the process towards steak nirvana is when you actually start cooking tenderloin. Unfortunately, this approach leaves out one of my best secrets for cooking perfect steak: start with the whole tenderloin. There are so many advantages to buying a whole tenderloin and breaking it down yourself. You can definitely save some money learning how to do this, and it is a lot easier than you think. When you buy the whole tenderloin, the first thing you have to do before cooking tenderloin is to remove the "chain". The chain is the side muscle; it contains a lot of the fat and is great for use later in stews, chilis or even my favorite treat: Tenderloin Philly cheese steak. But that's a whole other way for cooking tenderloin and beyond the scope of this article! Once you've removed the chain, you must remove the thick top end of the tenderloin - "the head". This, too can be set aside and used later. What you are left with is a long tenderloin from which to cut your steaks. The most important thing to remember is to try to cut the steaks of consistent size by weight. Consistent size equals consistent cooking, which equals reliable cooking! Use a scale and aim for a consistent size somewhere between 3 and 5 oz per steak, depending on who you're cooking for.

Do you Really Know How to Grill Beef?

If you believe most people, grilling takes no skill at all. It's so much easier than cooking and anyone can do this with little advance planning or common knowledge. Right? This is actually one of my favorite cooking myths! Knowing correctly how to grill beef (or anything else) is essential to outdoor cooking success. Grilling is direct source conductive heat. Cooking is to grilling as driving is to flying a rocket ship. Everything happens quickly and intensely with grilling and that includes mistakes. So, let's begin with the simple process:

  1. First, get the grill as hot as possible. Keep the lid down while heating the grill, but open when cooking. This is another common grilling mistake. If you close the lid while cooking, the method you are applying is similar to that of oven cooking. Why bother doing it outside on the grill?
  2. Brush the steak with olive oil and season with salt and pepper. You can use any other kind of seasoning or rub here, but I find that the true steak flavor comes from a good cut of meat and you don't need anything else. You might have a different opinion so season as you see fit.
  3. Place the steak on the hot grill "show side" down - meaning the side you'd want to display on the plate goes down on the grill first.
  4. Now observe for signs of done-ness. When the steak is 75% done on one side, flip it over and cook the rest of the way.

Knowing how to grill beef is a simple process, but most people still go into it blindly. By following the steps, you will always be working towards cooking the perfect steak, rather than just cooking a steak until it has reached a safe to eat temperature and texture. The fine line of difference between acceptable and perfection make all of the difference, and with perfection so reliably reachable, why not aim high?

How Long Should the Meat Cook? Until It's Done!

So, here we are. We always arrive at the same question. In travel, it's: are we there yet?; and in cooking, it's: how long should the meat cook?. Well, I have one answer to all of the how long questions: until it's done. Yes, it really is that simple. Let the meat cook until it's done. And now we get into the more interesting question: how do I know when it's done? I often say that cooking is a journey - so you are a tourist, an observer on that journey. As you observe what happens to the steak during the cooking process, you will notice some predictable things happen. First, at 165 degrees, proteins coagulate. What you will see when this happens is that the steak will stiffen and shrink. You will see the sides of the tenderloin start to get brownish gray. At 320 degrees, the sugars caramelize. If you lift a side of the steak up slightly and look underneath, you will see the formation of grill marks to indicate this is happening. You will also begin to smell that nice, sweet, smell - telling you that you are cooking perfect steak and all is happening as it should. When the steak is 50-75% cooked on one side, it reaches what is termed in French culinary as "a point". You will observe the juices start to bubble up to the red top. This indicates it is time to flip the steak, allowing it to finish its cooking on the other side. The last observation you will make to determine done-ness is the most quantitative because you will use a thermometer. Don't cut open your steak to peer into the middle! Don't stab at it with a fork! Both of these activities will release all of the juiciness you just worked so hard to achieve! 125-135 degrees is rare; 145-150 is medium and 160-165 is well done. So pick your temperature and remove the steak from the grill. But before serving it, let it rest for 5-10 minutes so that the juices can redistribute and run off onto the non-serving plate.

Just by understanding these simple facts about grilling, cooking perfect steak is almost a guaranteed result. Go ahead and get your own whole tenderloin today and get ready for some great outdoor eating!

Value Education is the much debated and discussed subject in the plethora of education in India. Of course it is true that the main purpose of any education will go with Value orientation. The problem mainly begins with the definition of values. Defining the term 'value' poses a challenge to all scholars. The term value is loaded with varieties of meaning. Each meaning reflects its own philosophical position. Generally the term value is spontaneously associated with religious values. It is believed by many Indians that values are nothing but the religious and spiritual guiding principles of life. Hence, it is supposed that the path is already been laid for the life journey. But in the context of modernity and modernism there rises a fundamental question of whether value education is required at all in a modern state. There are those who argue that modern life is based on science and technology, and both are value neutral. They view that the values are bugbear held out by people living in the past, glued to outdated religious principles that have no relevance to the 21st century. At this point, there is also another group of modernist who propagate the necessity of value education at learning centres in order to safe guard the democratic state and its values. The values they wish to cultivate are modern secular values such as honesty, respect to other, equality, collectivity, democracy, respecting the human rights, sharing equal space in the public sphere and so on. These values are considered as the products of enlightenment period. Hence, four positions could be arrived at on the basis of the above understanding. The are:

1. There are religious values which are very much essential for every one and must be included in the curriculum.

2. The religious values should not find place in the educational system. They may operate at the private sphere.

3. There are non-religious secular values and they must find space in the education.

4. There is no need for teaching value education in the academics because they cannot be cultivated through formal learning and such value cultivation will make the individual biased.

In consequence to these positions, following questions arouse.

1. Whether value education should find place in the educational system?

2. If it is required, then what sort of values should be given preference in the curriculum?

3. What is the importance to be given to the religious values which are primarily developed on the basis of scriptures?

4. Can modern values alone are sufficient enough or is there any possibility of blending the values of modernity with religious values?

5. If religious values are to be given importance in the curriculum, which religion will find prime place? If there are contradictory propagation on a single virtue by two religions, then how are they to be handled?

6. Similarly religions differ on the practices also. Right from eating patterns, dress mode, marriage systems, war tactics, killing, punishments to various other aspects, religions differ on their outlook. In this situation, what sort of perceptions need to be taught?

Besides these questions, another billion dollar question would be raised on the methodology of effectively imparting those values. Then again as it is mentioned earlier, the school education can very well include this education easily because the system itself is advantageous for it to accommodate. But at the college level, the system finds it very difficult to work out. So this study could analyse the theoretical problems relating to the identification of values to be included in the curriculum at the one side and the problem of effective designing of the curriculum and imparting those values on the other side.

Problems of life are becoming increasingly intense and complex. Traditional values are decentered. 'An environment of strife pervades all countries and broken homes have become common. An insatiable hunger for money and power, leads most of people to tension and absence of peace of mind and all kinds of physical and mental ailments have become common place" 1. In the present day context of frequent and often violent social upheavals, we have to look at the problem of restlessness of the youth, their frustration born out of futility of their search for meaning of life and the purpose for which they are living, often leading to evil and wickedness. This calls for a new approach to, and a new vision of education. It is obviously felt that the present educational system promotes rat race and keep the student community in a sense of insecurity. Educational institutions have become the pressure cookers building pressures in the minds of youth. Also a loft sided educational pattern which insists on instrumental and technical rationality for the successful life in terms of gaining money and power has invaded the educational system of India. The person who is deemed to be unfit for this survival race becomes disqualified and ineligible to live in this market economy based life. The spate of industrialization and economic growth in developed nations has brought about a perceptible change in this scenario. And developing countries including India are feeling the ripple effects of this development. Values earlier considered essential by all societies have been eroded and have given way to unethical practices around the globe. Where honesty and integrity were loved and appreciated, greed, corruption and red tapism have come in, bringing in their wake, unethical responses which have pervaded all walks of life and are thwarting efforts of a few enlightened individuals to promote value based society.2 Hence, implementation of well structured education is the only solution available with all states. With growing divisive forces, narrow parochialism, separatist tendencies on the one hand and considerable fall in moral, social, ethical and national values both in personal and public life on the other, the need for promoting effective programmes of value orientation in education has assumed great urgency. Development of human values through education is now routinely seen as a task of national importance. Value education though supposes to be the part and parcel of the regular education, due to the market influences, it could not be so. Hence, it has become an inevitable need to include an exclusive curriculum for value education at all levels.

Now the next question would be about the nature of value education. What sort of values should be given preference in the curriculum is the prime problem in the introduction of value education. This problem surfaces because we can find varieties of values prescribed on the basis of various scriptures and theories. Sometimes they are contradictory to each other. This issue has been thoroughly discussed earlier. But the solution to the problem of the nature of value education is primarily dependent on the social conditions that prevail in the state. There need not be an imported value educational pattern to be prescribed in India. The burning social issues would demand the required value education. Though India is considered to be the land of divinity and wisdom, the modern value system throws challenges to the ancient value pattern. Right from the Gurkula pattern to the varna ashrama values, all values are under scrutiny by modern rationality. Hence, the relevance of the golden values prescribed by the then society is questionable in the present situation. On the other hand, the so called modern values which have been listed earlier also subjected to criticism by philosophers like post modernists. They question the very nature of the rationality of the enlightenment period. Because critics of modernity strongly declare that the modern rationality is the reason for the deterioration of human concern in the world and they paved the way for inhuman killing and escalation of values. The reason of the modernism is considered as the root of power politics which leads to inhuman behaviour of the power system, according to them. Hence the modern values like democracy, civil rights, environmental ethics, professional ethics, discipline and all such values are found useless in bringing harmony in the society. The values like discipline, tolerance, peace bears the negative connotation in this context. Hence, what sort of modern values are to be included in the curriculum is a challenge thrown towards the educationists. At one side the fanatic and fundamentalist features of religious values and on the other side the modern values based on the market economy and other factors are to be excluded and a well balanced curriculum with genuine worthy values suitable to the society has to be identified and included in the educational system. In this context, it becomes obvious that there cannot be any universal pattern of values to be prescribed in the system. When a suitable blend of religious and modern values is to be done, the designing of such course demands an unbiased, scrupulous, intelligent approach on the part of the academician who designs such course. Thus the spiritual values of sensitizing the youth for happy world and rational values for a just world are very much required. Religious values can be taken but not with the label of any particular religion, democratic values are to be included but not with its dogmatic inhuman approach. Thus there need a perfect blend of both. This is the real challenge thrown to the Indian academicians.

After the identification of these values, they need to be inculcated not to be informed to the students. Mostly listing the values is done very easily, but imparting them effectively requires genuine spirit and innovative educational practices. In the Vedic period, the gurukula system prevailed in which the student has to thoroughly undergo a pattern life with the guru shishya hierarchy. Whatever the guru declares are the values of life. But in the modern context, which is supposed to be the democratic sphere, a sense of equality and freedom has to prevail the learning situation. Also the values identified cannot be preached on the basis of the religious faiths. So the teacher has to find effective working module to internalize the values in the minds of the youth. The teachers' understanding about the values prescribed and his/her commitment in imparting them also play a crucial role here. How to sensitize the teacher before carrying the values to the students is also a challenge to the educationists. The value education class room, if it is dealt with full seriousness and sincerity would be very interesting and challenging sphere for students and teachers. At times they need to sail at the same level with the students. The hierarchy may get disappeared. Value education demands a total responsibility from the teachers. They become more accountable. On the other side, a teacher who is committed to a set of values would always like to preach and impose them on the young minds. That extreme should also to be avoided with a balance of mind. Value education cannot be done by just delivering lectures and screening films. It requires a strong interaction between the students and the society. A lot could be experimented at this sphere. For which the supreme value 'integrity' is expected from the educator.

It is observed that many modules of teaching values have been designed and tested. Some are seemed to be very effective. In Tamilnadu, especially in aided colleges, with all good intention the government has introduced the value education as a compulsory scheme at the undergraduate level. But each university has its own syllabus for the same. The scrutiny of those syllabi also reveals a lot of variations in conceiving the value education. In some universities, some religion based institutions are given the responsibility of designing and even carrying out the course. Similarly the teachers who have not been exposed to any such type of training in value education are given the responsibility of teaching values. The introduction of value education for all under graduate courses is done at the cost of a core paper of that course. The teachers who have been handling their hardcore subject papers had to meet the shortage of workload due to this programme and to solve this problem, they have been entrusted with the job of teaching value education paper. This is done with the aim of avoiding the workload problem of existing teachers. The most valuable and sensitive part of education has been made like a mechanical dogmatic part. At this juncture, the fate of value education at the college level could be imagined. How to solve this issue is again a challenge to the educationists of Tamilnadu. The same fate could be observed in many other states of India. Hence, two important problems surfaces here, one at the syllabus level and the other at the teaching level. As it is discussed earlier the syllabus could be designed by way of paying attention to all aspects but imparting the same requires not only innovative teaching methods, but also innovative training method of the educators. It is as good as training the driver to drive the car; the teacher needs to be trained in imparting the values. The technical education employs teachers with sound knowledge in the subject, similarly it is essential to have teachers with sound mind and creative teaching skill to teach value education. Value education is definitely not to be dealt with compartmentalization but it should be taken as a part of the whole educational system. As Nietzsche puts it, the society requires masters to create and impart values, not the slaves who accept all the values imposed on them without any critical understanding.

If education fails to impart necessary values to its citizens, it will definitely have a telling effect on the society. All efforts to bring just and peace in the world will become futile if proper value education is not imparted.

Louisiana Integrated Skills Assessment (LISA)

One of the most unique comprehensive career cluster resources is the Louisiana Integrated Skills Assessment (LISA), an Internet program. LISA lets you explore career clusters, careers, abilities, training requirements, and more. Using the Lisa, you can do the following tasks:

    The Easy Way to Buy a Car With Bad Credit

    A Step-By-Step Tutorial: How to buy a car with bad credit without it turning into a nightmare.

    Are you tired of hearing the word 'No' when it comes to a car loan? I set up 'How to buy a car with bad credit' specifically so that you could hear the words 'yes'. Who am I, you ask?

    I spent 14 years in the automobile business as a Finance Manager so I believe it's fair to say that I know a thing or two about getting a loan financed, irregardless of your past credit history.

    Remember, regardless of your past credit history, you still need a car, want a car and most of all, you deserve a car. You should also be treated with respect and given choices. I'm going to teach you how to have a choice with auto bad credit financing loan.

    First of all, all lenders now purchase deals based on what is called a beacon score, which is the same as your credit score. There are three credit bureaus that make up the package. Each lender will choose whichever credit bureau(s) they prefer when looking at your credit or a combination of bureaus.

    I highly advise everyone to have all three credit bureaus pulled when checking your credit and to pay for the credit score. If you only look at one bureau, you're only seeing part of the whole picture.

    With the exception of a few minor things, beacon score will play a large part in your approval. Staying within your financial means is another, so be realistic. If you make $2500 per month and have $1200 going out, don't walk in all high-and-mighty and tell the Finance Manager that you will only have an Expedition or nothing. You'll end up with nothing.

    In order to effectively use auto bad credit financing, you are going to have to know what your credit looks like and what your credit score actually is. Otherwise, you are working in the dark.

    Pay for the credit score or it's just almost useless. With the credit score, you will know whether or not you qualify for a lender such as Ford. Also, the higher the score, the lower the interest rate. Got it? With an auto bad credit loan, the higher the beacon score, the better.

    Let me explain websites like cars.com and the such: They collect applications for car loans online. They then have a network of dealerships that PAY them for the leads. These are generally dealerships that have departments that specialize in getting you financed, regardless of your credit. These departments pay for these leads, so most take them very seriously, as they are their bread-and-butter, so to speak.

    If you have a lower than usual credit score, a current repo or just plain, all-around bad credit, this might be the way to go. If your credit is really that bad, remember that you are going to need some cash or a paid-for trade in that's actually worth something.

    O.K., now for the step-by-step system that I promised. First, take control of your car deal! You need to be in the driver's seat, if at all possible. Go online and run a copy of a tri-merge, which is all three credit bureaus, plus pay for your credit score. You can get a FREE copy of your credit report once per year HERE:

    This is the new Federal law that actually entitles you to receive a FREE copy of your credit bureau once per year and with some other exceptions. This is not a credit monitoring site. You have to run each bureau separately; Experian, Equifax and TransUnion. Then, you have to pay for the credit score.

    So as to hold down on confusion, here's the scoop: Each credit score for each separate bureau will be different. That's why a Tri-Merge is called what it is called. You can run a specific bureau called a Tri-Merge from one company (there are many-just do a Google search) and you actually get one bureau (it's actually all three combined but the credit score is also one credit score). It's more expensive and generally runs around $34.00 but it just depends on your preference.

    Now, with your credit score in hand and a copy(s) of your credit bureau, look at your credit. Do you have anything strange on there that is not yours? If so, it's time to fix it. You should review your credit bureau at least every 6 months to a year. Plus, if your identity has been stolen, you will know quickly. P.S. you can also have a liner placed on the bottom of your bureau that simply states "Do not extend any credit on my behalf without contacting me first. Work # (111)222-3333 Home#(222)333-4444 Cell# (333)444-5555." Call or write the credit bureaus and request that this is done. You can now do this online for free. Again, do a Google search for all three bureaus listed above.

    Next in line: Know what you want to buy BEFORE you even go out shopping! Let me make this very clear. Car dealer's jobs are to sell you a car on your very first visit. A salesman/woman and their sales manager believe that if you walk into their dealership and do not leave with a car, you will never come back again. They are going to hammer on you until they either A) Make you mad and you get up and leave or B) Sell you a car. It's the nature of the beast. Accept it ahead of time.

    What do you want to buy? Where can you get unbiased information on the auto? Again, Google for Kelley Blue Book or NADA and you can get cost, warranty repairs, recalls, and information on problems and tons of info beforehand. Limit your shopping to three models. Keep it simple. Those will be the ones that you will shop for.

    Can you afford the car? You may think you can afford the car, but the bank may think otherwise! I have seen this so many times in my career. Automobile economics 101: Take your gross income (what you make per year BEFORE Uncle Sam taxes you) and remember, this income needs to be provable-tax returns, check stubs with taxes taken out or a W-2. If you are self-employed, you will need two years of tax returns with Schedule C's. This is the income that you actually paid taxes on. Being self-employed can be tough. You may need to combine a spouse's income if you are self-employed.

    Now with your gross income figured out, find out what all of your debts are that are going out each month. Include everything...it's listed on your credit bureau's. Example: Car note=$450.00 + House note= $560.00 + Credit card debt= $425.00

    Boat note= $310.00 Charge-offs=$1200.00 (yes, charge-offs; these are bills that you never paid and they were written off). Add all of your debts up. With just your obvious debts (including the charge-offs), you have $1805.00 per month going out. I arrived at that figure by adding up all the monthly notes and taking 5% of the charge-offs. 5% of $1200.00 = $60.00. We're not through, though. Now we have to figure in cost of living-utilities. Each lender has their own algorithm for utilities but a good range to estimate would be to add $300.00. Now we have a total outgo of $2105.00. This is what you have to have to pay your current bills before you take on any other debt.

    Almost all lenders will not allow your new car note to exceed 20% of your current income. For our example, let's assume that your gross income is $5300.00 per month. Let's take $5300.00 and subtract your debts, which are $2105.00. That leaves you with $3195.00. To make it easy, take $2105.00 and double it. That would be $4210.00. That would leave you with disposable income of $1090.00. What the lender is looking at here is referred to as debt-to-income. They want to know if you have more going out than you can handle. This is strictly a case of numbers and provable numbers. If your gross income was $4500.00 and you had $2105.00 in debts each month, you need to be prepared for one of two things; add your spouse's income and your spouse to the deal or trade in the other auto. If your debt-to-income is running too close to 50%, you're going to have a hard time getting a loan for anything. Make sense? The way the bank looks at it is this: you can't afford both cars so they assume that you are going to let the other (older) car go back to the lender-repossession. That's their take. Debt-to-income is a HUGE deal.

    In this case, your disposable leftover income is $1090.00. 20% of that would be $1060.00. Whoa! Let me be the first to inform you that you are NOT getting a car payment of $1060.00! Why? Well, you only have $1090.00 left over for starters. Let's be realistic here. Most lenders will slice that in half which will equal $530.00. Your payment call should be around that figure, give or take a few dollars.

    How expensive of a car can I buy on a $530.00 payment? Good question and one that you absolutely need to know so that you can pick out the correct car. One answer depends on the term of the loan. You can finance for 36, 48, 60 or 72 months, as a for-instance. That equates to 3 years, 4 years, 5 years and 6 years. I will tell you this: the worst thing you can do is extend the note out the longest amount of time in order to get the payment where you can afford it. That creates a syndrome that now affects over 75% of car owners called being "Upside Down." It means that you owe more on your car than it's worth. It also means that you need more money down when you go to trade it in. The only way around that is a lot of money down or a short-term loan.

    You can again do a Google search for a 'car loan calculator'. You will punch in the loan amount you want to borrow, the term (48,60, etc.) and the interest rate. If you have not gotten approved already and know the rate, you will have to guesstimate. Here's a rule of thumb for you-it's not an exact science without knowing your credit, but it is a guide you can follow to get you close. Let's base the rate on your beacon score: that's what most of the lenders are going to look at.

    If your beacon (credit score) is in the 400 or lower range, you will need to figure your interest rate on a new car at 21% (state maximums differ-it could be 18%). If you are looking at a used car, figure on 33%. If your beacon score is in the low 500 range, figure your new car loan as you would for the above-mentioned 400 beacon. If your beacon score is in the mid to high 500-range, figure a new car at 18% and a used car at 27%. If you have a beacon of 600 to 649, figure a new car at 16% and a used car at 20%. If you have a beacon score of 650 to 699, figure a new car rate at 12% and a used car rate at 16%. I may be hitting too high on a few of these, but I live in a state that has the highest rates in the nation. Better safe than sorry.

    Get Pre-Approved BEFORE you start shopping. This is the easy part, in a way. Remember I told you at the beginning of this article to take charge of your car deal instead of letting the dealer lead you by the hand. It all boils down to financing. If you can walk in with a check in your hand, you are in control. I will recommend a few companies that are reputable, have a proven track record in sub prime loans and all mail the check to you at home. You then go into a dealership and pick out your vehicle, negotiate and buy like a cash buyer! These companies are Household Finance, Capital One Finance, Americredit and E-Loan. You can do a Google search for all four, apply online, and get either an instant approval or one really quickly. When you are approved, they mail the contract to you and then the check. It's that easy.

    On the final decision for the car-work smart here. There is nothing more valuable than time and nothing more rewarding than piece of mind. Please don't go running from dealership to dealership. Wrong. Pick out the 3 models of auto that you can afford. If you are looking for a program car (rental), call dealerships and inquire as to whether or not they have any. If you want a new, ask other people that are driving that model where they bought theirs and would they purchase there again. If you start hearing a lot of "I'll never buy from them again", move on. Something is wrong. Your new car is only as good as the service you will get AFTER the sale.

    Negotiating-Most people hate this. I have only met 2 people in 14 years that enjoyed it; they were both retired and had nothing better to do. One did it for the fun of it and never even bought if you agreed to his price. Don't waste other people's time. If you don't like the car, don't negotiate on it.     What's the difference? Most dealers (with the exception of the West coast) will use NADA as their guide.

    Here's what's transpired so far:

    Before you ever drove the car, you went by the dealership on Sunday, when there are no salespeople and you got the Vin# of the car and the equipment, year model and had a good look at it. You already know if you like the car when you drive it, that you would buy it. The list price is in your pre-approved check category, to boot. You've already gone online and gotten wholesale, trade-in and retail values for the car.

    Retail is what the dealer should ask for the car. This will help you to know whether or not the salesman is trying to add money to the car, or if the dealership is. Trade-in is a figure to gauge approximately what the dealership traded for the car for. It will give you an idea of what the dealer paid for the car, before reconditioning fees and any ticket from service. Now, not every make of car will bring trade-in value. Two that will at this time are a Honda and a Toyota. Those cars will bring trade-in value. Domestic cars generally will not bring trade-in value, with the exception of new, hot models. Other models will only bring wholesale. As an example, Kia makes a great car, but most will not bring close to trade-in value. Mitsubishi is going through changes and also won't bring close to trade-in value. There are exceptions to the rule: Katrina and Rita-two hurricanes that created a short supply of used cars. If you live in the south, that will be the case for a while. With the exception of a Honda and a Toyota, you can probably be safe offering less than trade-in. Not thousands, mind you, but less.

    Take into consideration the other costs of trading for a car. Also, ask the salesperson how long they've had the car. If the salesperson slips up and tells you they've had it a while, your negotiating should be easier. The reason behind that is that the dealer is paying interest on the car every month it does not sell. The book value is also dropping every month so it needs to go.

    Throughout the car deal, make sure they know you are paying cash. Don't mention that you have a check from Americredit or whoever. That's none of their business. When you make a deal, insist on the Used Car Manager running a Car Fax before you sign any paperwork. A Car Fax will show if the vehicle has been involved in a serious wreck, was bought back from the original customer or is salvaged. This will put your mind at ease. If you don't like the Car Fax, don't buy the car.

    Throughout your shopping, I can't stress this enough-Do NOT fill out credit applications at each dealership. Every time you sign a credit application, the dealer pulls your credit report and your beacon score goes DOWN. That's why I advise on getting approved ahead of time. There are numerous advantages to getting approved ahead of time. The main advantage is that you are in control, not the dealership. That's worth a fortune in itself. Their job is to take control of you from the start of every meeting. Believe me; I know what I'm telling you. I lived that life for a long time.

    For some reason, should you not be able to get pre-approved because your credit is extremely bad (a discharged bankruptcy is an instant-approval, by the way), and you have to go through an online clearinghouse like cars.com, don't despair. Continue to follow my previous steps and advice and negotiate and insist on a Car Fax report.

    When you do decide on a car and go into the Finance Office to sign the papers, I would like for everyone to know that you do not have to purchase any products in order to get the loan. If anyone in Finance tells you that you have to purchase a warranty and credit life to get the loan, which is a bold-faced lie. Why would a Finance Manager do that? Because they work on commission, also. Surprised? Don't be. That's the way dealers set up Finance Offices from the start when they realized how much money could be made. The Finance Manager makes money off of the rate they quote you, the warranty they sell you, the gap insurance and the credit life and disability you buy. That's how they make a living.

    I'm not saying that any of these products are bad, though. I believe in extended warranties. I'm just telling you to shop around first. If you find a cheap warranty, check out the company and make sure they will give the dealer a credit card over the phone immediately when in need of repairs in any state. All in all, I will say this-A manufacturers warranty is always better than an after-market warranty. Always. Just negotiate on it if you want it.

    The only reason why you would not want gap insurance would be if you literally paid cash for the car. Otherwise, gap is cheap (should retail around $495) and will pay the portion that insurance won't pay if it's totaled. Just remember what I said about the book dropping on a car every month. It will never be worth what you owe unless you put down a lot of money at the time of purchase.

    Credit life and Disability insurance are a personal matter. If you have a life insurance policy, it can be used to pay off the car in the event of your death. If you are single, why do you need Credit Life? The only benefit would be if you are married with a family, it cuts down the payout time. In this situation, your spouse would not lose the car.

    Disability Insurance pays out for a specified amount of time. It will not pay out for the entirety of the loan. It also has a specified start date from the time you are disabled. It doesn't just kick in immediately.

    This is a lengthy article, but the gist of it is this: do your homework at home first. Then get approved online. Then shop on Sunday. Then go get your car and negotiate on everything. It will be the easiest car-buying experience you have ever had.

Anytime the cash flow in a business, large or small, starts to tighten up, the money management of that business has to be run as a "tight ship."

    Some of the things you can and should do include protecting yourself from expenditures made on sudden impulse. We've all bought merchandise or services we really didn't need simply because we were in the mood, or perhaps in response to the flamboyancy of the advertising or the persuasiveness of the salesperson. Then we sort of "wake up" a couple of days later and find that we've committed hundreds of dollars of business funds for an item or service that's not essential to the success of our own business, when really pressing items had been waiting for those dollars.

    If you are incorporated, you can eliminate these "impulse purchases" by including in your by-laws a clause that states: "All purchasing decisions over (a certain amount) are contingent upon approval by the board of directors." This will force you to consider any "impulse purchases" of considerable cost, and may even be a reminder in the case of smaller purchases.

    If your business is a partnership, you can state, when faced with a buying decision, that all purchases are contingent upon the approval of a third party. In reality, the third party can be your partner, one of your department heads, or even one of your suppliers.

    If your business is a sole proprietorship, you don't have much to worry about really, because as an individual you have three days to think about your purchase, and then to nullify that purchase if you think you don't really need it or can't afford it.

    While you may think you cannot afford it, be sure that you don't "short-change" yourself on professional services. This would apply especially during a time of emergency. Anytime you commit yourself and move ahead without completely investigating all the angles, and preparing yourself for all the contingencies that may arise, you're skating on thin ice. Regardless of the costs involved, it always pays off in the long run to seek out the advice of experienced professionals before embarking on a plan that could ruin you.

    Particularly when sales are down, you must be "hard-nosed" with people trying to sell you luxuries for your business. When business is booming, you undoubtedly will allow sales people to show you new models of equipment or a new line of supplies; but when your business is down, skip the entertaining frills and concentrate on the basics. Great care must be taken however, to maintain courtesy and allow these sellers to consider you a friend and call back at another time.

To keep them current, and the number of accounts receivable in your files to a minimum, you should call them on the phone and ask for some kind of explanation why they're falling behind. if you develop such a habit as part of your operating procedure, you'll find your invoices will magically be drawn to the front of their piles of bills to pay. While maintaining a courteous attitude, don't hesitant, or too much of a "nice guy" when it comes to collecting money.

    Something else that's a very good business practice, but which few business owners do is to methodically build a credit rating with their local banks. Particularly when you have a good cash flow, you should borrow $100 to $1,000 from your banks every 90 days or so. Simply borrow the money, and place it in an interest bearing account, and then pay it all back at least a month or so before it's due. By doing this, you will increase the borrowing power of your signature, and strengthen your ability to obtain needed financing on short notice. This is a kind of business leverage that will be of great value to you if or whenever your cash position becomes less favorable.

    By all means, join your industry's local and national trade associations. Most of these organizations have a wealth of information available on everything from details on your competitors to average industry sales figures, new products, services, and trends.

    If you are given a membership certificate or wall plaque, you should display these conspicuously on your office wall. Customers like to see such "seals of approval" and feel additional confidence in your business when they see them.

    Still another thing often overlooked: If at all possible, you should have your spouse work in the business with you for at least three or four weeks per year. The important thing is that if for any reason you are not available to run the business, your spouse will be familiar with certain people and situations about your business. These people should include your attorney, accountant, any consultants or advisors, creditors and your major suppliers. The long-term advantages of having your spouse work four weeks per year in your business with you will greatly outweigh the short-term inconvenience. Many couples share responsibility and time entirely, which is in most cases even more desirable.

    Whenever you can, and as often as you need it, take advantage of whatever free business counseling is available. The Small Business Administration published many excellent booklets, checklist and brochures on quite a large variety of businesses. these publications are available through the U.S.Government printing office. Most local universities, and many private organizations hold seminars at minimal cost, and often without charge. You should also take advantage of the services offered by your bank and local library.

    The important thing about running a small business is to know the direction in which you're heading; to know on a day-to-day basis your progress in that very direction; to be aware of what your competitors are doing and to practice good money management at all times. All this will prepare you to recognize potential problems before they arise.

    In order to survive with a small business, regardless of the economic climate, it is essential to surround yourself with smart people, and practice sound business management at all times.

    Three Steps to Cooking Perfect Steak on Your Outdoor BBQ Grill

    If you're like me, When you crank up that BBQ grill for the season it's all about cooking perfect steak. I love all kinds of foods cooked on an outside bbq grill, but none says summer quite like that sweet smell of steak on the grill. For me, the results are always predictable and always pretty close to perfect. This is because I use the same process every time and I start with the end result in mind. So that's my first tip: cooking perfect steak starts with identifying what that means to you and then learning about the basic cooking method so that you can navigate to that desired point. You'll have to decide on the definition of perfection for yourself - that's the fun part. But the next few paragraphs should help with the second part - learning the process and the basic cooking method that helps get you to your perfection.

    It All Starts BEFORE Cooking Tenderloin!

    For most carnivores, the beginning of the process towards steak nirvana is when you actually start cooking tenderloin. Unfortunately, this approach leaves out one of my best secrets for cooking perfect steak: start with the whole tenderloin. There are so many advantages to buying a whole tenderloin and breaking it down yourself. You can definitely save some money learning how to do this, and it is a lot easier than you think. When you buy the whole tenderloin, the first thing you have to do before cooking tenderloin is to remove the "chain". The chain is the side muscle; it contains a lot of the fat and is great for use later in stews, chilis or even my favorite treat: Tenderloin Philly cheese steak. But that's a whole other way for cooking tenderloin and beyond the scope of this article! Once you've removed the chain, you must remove the thick top end of the tenderloin - "the head". This, too can be set aside and used later. What you are left with is a long tenderloin from which to cut your steaks. The most important thing to remember is to try to cut the steaks of consistent size by weight. Consistent size equals consistent cooking, which equals reliable cooking! Use a scale and aim for a consistent size somewhere between 3 and 5 oz per steak, depending on who you're cooking for.

    Do you Really Know How to Grill Beef?

    If you believe most people, grilling takes no skill at all. It's so much easier than cooking and anyone can do this with little advance planning or common knowledge. Right? This is actually one of my favorite cooking myths! Knowing correctly how to grill beef (or anything else) is essential to outdoor cooking success. Grilling is direct source conductive heat. Cooking is to grilling as driving is to flying a rocket ship. Everything happens quickly and intensely with grilling and that includes mistakes. So, let's begin with the simple process:

    1. First, get the grill as hot as possible. Keep the lid down while heating the grill, but open when cooking. This is another common grilling mistake. If you close the lid while cooking, the method you are applying is similar to that of oven cooking. Why bother doing it outside on the grill?
    2. Brush the steak with olive oil and season with salt and pepper. You can use any other kind of seasoning or rub here, but I find that the true steak flavor comes from a good cut of meat and you don't need anything else. You might have a different opinion so season as you see fit.
    3. Place the steak on the hot grill "show side" down - meaning the side you'd want to display on the plate goes down on the grill first.
    4. Now observe for signs of done-ness. When the steak is 75% done on one side, flip it over and cook the rest of the way.

    Knowing how to grill beef is a simple process, but most people still go into it blindly. By following the steps, you will always be working towards cooking the perfect steak, rather than just cooking a steak until it has reached a safe to eat temperature and texture. The fine line of difference between acceptable and perfection make all of the difference, and with perfection so reliably reachable, why not aim high?

    How Long Should the Meat Cook? Until It's Done!

    So, here we are. We always arrive at the same question. In travel, it's: are we there yet?; and in cooking, it's: how long should the meat cook?. Well, I have one answer to all of the how long questions: until it's done. Yes, it really is that simple. Let the meat cook until it's done. And now we get into the more interesting question: how do I know when it's done? I often say that cooking is a journey - so you are a tourist, an observer on that journey. As you observe what happens to the steak during the cooking process, you will notice some predictable things happen. First, at 165 degrees, proteins coagulate. What you will see when this happens is that the steak will stiffen and shrink. You will see the sides of the tenderloin start to get brownish gray. At 320 degrees, the sugars caramelize. If you lift a side of the steak up slightly and look underneath, you will see the formation of grill marks to indicate this is happening. You will also begin to smell that nice, sweet, smell - telling you that you are cooking perfect steak and all is happening as it should. When the steak is 50-75% cooked on one side, it reaches what is termed in French culinary as "a point". You will observe the juices start to bubble up to the red top. This indicates it is time to flip the steak, allowing it to finish its cooking on the other side. The last observation you will make to determine done-ness is the most quantitative because you will use a thermometer. Don't cut open your steak to peer into the middle! Don't stab at it with a fork!     If you're really serious about improving your short mat bowls game, there are a few key points you should consider when selecting your bowls. The first thing to think about is the weight of the bowl. Obviously you want to be able to hold it comfortably in your hand first and foremost, but you also need to be able to "feel the weight." Bearing in mind that adding that all important extra yard might take just an extra ounce of strength in your delivery, you really want to be able to "feel" the bowl to be able to make the necessary adjustment. It's always a good idea to have a practice with a friend or team mate's bowls, trying out different weights to get an idea of what is right for you.

    Once you think you've found the right sort of weight that suits you, the next step is deciding on the size. Now, in days gone by if you decided for instance, that a 2lb 12oz bowl felt like a good weight, you were pretty much stuck with the size that that particular weight came in.

This means that if you like the "feel" of a 2lb 12oz bowl, but (like me) you have fairly small hands, you could opt for a 2lb 12oz "high density" bowl; which will be the same size as a standard 2lb 10oz but with all the weight of a 2lb 12oz one!

    Equally, if you have giant sized hands but maybe have the strength of a new born lamb (!) then you might want to go with a low density bowl; a larger bowl but in a lighter weight.

    The final important factor to take into account when selecting your short mat bowls is the strength of the bias. This is the clever part of your bowl which makes the bowl turn (or peg) as it begins to slow down. As a general rule, a bowl which is made for crown green bowls has a standard bias, whereas bowls manufactured specifically for indoor bowls or short mat bowling tend to have a stronger bias, resulting in a greater effect when the bowl turns.

    Under the official rules of short mat bowling, you aren't restricted to the type of bowl you can use which means you can play with crown green, flat green, indoor or short mat bowls. Therefore, the decision is again down to personal preference; whether you feel more comfortable playing with a bowl which turns more (an indoor or short mat bowl) or a weaker biased crown green bowl.

    As somebody who plays crown green bowls as well as short mat, I use my crown green woods for both. However, I tend to play lead in a team of three during short mat games, which means there are never too many other bowls for me to bowl around when I send mine. For somebody who plays second or more particularly, third as skip, I would recommend playing with indoor/short mat bowls as the stronger bias is of great benefit when you are trying to negotiate the minefield of bowls that usually exist towards the conclusion of an end.

    There you have it then. As long as you keep the above factors in mind you can't go far wrong; so you're free to go and get that fancy set of orange and green bowls you've had your eye on all this time!

    Hiking With a Large Family

    You've never been into hiking, your spouse has never been into hiking, and you've never taken your children hiking. But you're planning on visiting a national park, and you want to be able to hike the trails to be able to see the sites. Or, you want to get out with the family, and you've decided that a great way to do this is to hike. Both of these are excellent reasons to start hiking together as a family. Hiking together can also have other benefits, such as increased family bonding and great memories that you and your children will take home with you, not to mention that it's a great way to get exercise.

    I am part of a large family, and we've hiked together for years. Part of this is due to the fact that our parents love to hike, but another part of it is that we enjoy walking together and seeing new and interesting places. However, it can be daunting to try and figure out how to get all of the children to the end of the trail and back again. In this article, I will try and explain how to hike with a large family. Remember, however, that this is from my own experience, and that your experience will likely be different than mine. Mix and match my ideas and your own ideas and expectations to create something that will work for your family.

    Preparation

    We didn't wake up one day and say, "Hey, let's start hiking 10-mile trails." This has to be worked up to, especially if you are hiking with several children. When we first started, we were walking the 400 ft. to overlooks. As we grew, our abilities grew, and we began hiking longer and longer trails.

    Therefore, you will need to work up to hiking long distances. This can be accomplished by walking on local trails that are somewhat similar to the longer trails you plan to do later. For example, you can begin by walking mile or for a certain amount of time (such as 1 hour) and then work up to longer trails and longer timeframes. This will also help the parents gage the abilities of their children, and help them select trails that are not above their own abilities. Great places to hike are local parks, state parks, rails-to-trails areas (these are flat and often easy to walk on but usually lack nice views), and other local wild areas that have trails. The internet is a great resource for finding trails in your area. In this article, when I talk about "hiking", I mean walking trails that are at least a mile long. This information may also be useful for shorter distances, but in general this information applies better to longer trails.

    Gaging Your Children's Abilities

    When hiking with your children, assess their abilities as well as their desires. Do they simply not want to go any further when they say they're tired after the first 10 minutes? Or are they really not up to a long hike? This takes discernment on the part of the parents, and understanding the children. A good attitude on the part of the older children and parents helps: I have found that if the older children think this is some kind of cool adventure, the younger children are often more than happy to join in on the excitement. However, remember that the point of hiking is not to have a forced march that no one enjoys. By having hiked with your children before and understanding their abilities, you can choose trails that are within your children's ability, but that perhaps push them just slightly further...and then a little further...so that it builds their ability slowly.

    You may find that the older children are far more capable than the younger children at hiking long distances. This is not surprising. After all, they have to take two or even three steps to every one of your own! However, this does not mean that you must carry the child. I feel so sorry for the parents I see who are still carrying their 5-year-old. The parent is huffing and puffing, and the child is just there for the ride. We usually carried our children until they were about three years old, and then eased them into hiking on their own, or holding the hand of an older child or adult. Even after that, though, we would occasionally carry a child if they had been hiking a very long time and were tired.

    Another way to keep the younger children hiking is to tell them stories. The parents can do this, as can the older children. Some of the younger children can also tell their own, although most of ours preferred listening to the ones we came up with. Stories can be classics like "The Three Little Pigs" and "Goldilocks and the Three Bears", or you can make up your own.

    Older children can be very helpful with the younger children. I really enjoyed carrying my younger siblings, even if I was only 11 and they were 1. Later, when several of us were older (13+), we did all the carrying of the younger children, and our parents rarely carried any children, even on long hikes. Even if they can't carry a child, older children (6+) can walk with their younger siblings, helping them along the way, holding their hands, encouraging them to keep going, and so on. Often we'd just end up helping them, but sometimes we would be assigned a child, like, "Ok, until the next rest break, you get to walk with your youngest brother" or something like that. If your family has a buddy system, this is a great place to use it. Sometimes children like to run ahead on trails. This may be fine in some situations, especially if the children are older, but you may want to restrain them by, for example, telling them not to go out of sight of you.

    What to Take With You

    The age of your children and the length of the hike will determine exactly what you need to take with you. For example, if you have very young children, you will need to take diapers, wipes, formula (if you use it), etc. for them. You may even have to dedicate a backpack to this type of stuff. Some baby backpacks come with pockets for such things, but I have never found these to work very well. Also, if you're taking a longer hike, you'll need to bring more food and water than if you are taking a shorter hike.

    Probably the most important thing to take on a hike is water. This is especially true if the weather is hot or you are hiking in dry areas such as the American southwest. In such weather or areas, it is very easy to dehydrate, so bring plenty of water for each person. We have a plastic refillable bottle (16-oz.) for each person. These are easy to refill and transport on the trail. On very long hikes (8+ miles) we bring extra water in a small water jug (1-gallon) which fits into a daypack.

    Another very important item to bring is food. "An army marches on its stomach" and so do hikers, especially children. Small snacks can make the difference between making it back to the parking area in a reasonable time and dragging the children for hours on the last mile. The packs can be heavy in the beginning, but everyone will be thankful for the food later in the day.

    Who should carry this stuff? Well, it will depend on the age of your children, in part. Older children (6+) can carry daypacks with food, water, or other items in them. This is especially helpful if the parents need to carry smaller children. Another option is for one parent to carry a child and the other to carry some of the food, etc. See what works for you. We nearly always take at least five packs to spread out the weight between as many people as possible (usually this means the five oldest children are carrying backpacks). The water bottles themselves usually get spread over two packs, or each person carries his or her own.

    Hiking as a family can be a fun experience for everyone, especially when there are many of you to enjoy it together. However, each family is different and will need to figure out what works best for them. Once you have worked out what works best for you, you can enjoy many hours of walking and enjoying the outdoors together as a family.

    How to Cook a Turkey – Without Poisoning Your Guests

    Why temperature is so important

    NB. F = Degrees Fahrenheit and C = Degrees Centigrade

    Temperature is critical in determining how long to cook a turkey, for the simple fact that the bird must have reached a uniform temperature of at least 165 F throughout in order to destroy harmful bacteria. You do not want to give your guests food poisoning!

    The turkey is a weird shaped food source! - Large body covered with thick flesh around the breast area, large legs made up of dense muscle and a large internal cavity. Because of this, it is not so easy as cooking a single joint of meet for example. The breast meat tends to cook much faster that the dense muscular leg meat, so there is a risk of over-cooking the breast meat whilst waiting for the leg meat to cook thoroughly.

    Deciding how long to cook a turkey is not an easy question to answer as there are so many variable factors to consider.

    The type of oven

    With conventional gas or electric ovens (not Microwave, Convection, Rotisserie) the top of the oven is the hottest zone. The middle part of the oven is usually the coolest zone. The bottom part of the oven is usually also a cool zone in a gas oven, but in an electric oven this area can be a hot zone. As the turkey will remain in the same position throughout the cooking cycle, this will influence the length of time and how evenly the turkey cooks.

    Microwave ovens work on an entirely different principle but due to the larger size of turkey compared to chicken, may not be large enough to cook turkey.

    Convection ovens are more efficient than conventional ovens because an internal fan circulates hot air all around the food. Turkey cooked in a convection oven should be more evenly cooked with maybe a 50% saving in time.

    Rotisserie ovens are also more efficient than conventional ovens because the food is continually turned allowing heat to penetrate evenly.

    Size and weight of the turkey

    No surprises here, but the larger and heavier the turkey, the longer the time period for cooking! If the turkey is so large that it only just fits into the oven, seriously consider using a bigger oven or buying a smaller turkey. The reason for this is that to cook the turkey thoroughly, there must be a good air space all around the turkey to enable hot air to circulate. If this is not the case then it will be difficult to gauge cooking times and ensure even cooking throughout.

    Fresh or frozen turkey?

    Many people prefer to cook a fresh turkey as the taste is said to be superior to frozen. Fresh turkey should be purchased 1 to 2 days prior to cooking and stored in a refrigerator. When ready to cook take out of the refrigerator and allow to come up towards room temperature.

    Frozen turkey is more convenient for many people however and provided the correct thawing out procedure is followed, should be safe and tasty. Care must taken to follow the suppliers thawing out instructions correctly, including that applying to stuffing. A general guide to thawing frozen turkey stored in a refrigerator is to allow 24 hours for every 4-5 pounds weight (e.g. a 14 pounds turkey would take 3 to 4 days to thaw out).

    Deciding how long to cook your turkey

    Professional chefs cook their turkey at an oven temperature range 325 F to 350 F (170 C to 180 C).

    As a guide, if you are cooking a 12 pounds weight fresh or thawed frozen turkey without stuffing using a conventional oven operating at a temperature of 325 F, the likely cooking time would be 3 Hours. When stuffing is placed within the turkey it will take a little longer to cook through so the cooking time must be increased. Refer to a good turkey cook book for full instructions.

    Testing temperature when cooking your turkey

    The old school method for testing when your turkey is cooked is to use a clean metal skewer. When the approximate cooking time is up, you take the turkey out of the oven and carefully pierce the thickest part of the leg with the skewer. Remove the skewer and press against the leg to see if the juices run out clear without any trace of pink - if the juices are clear then the turkey should be cooked.

    There are more accurate methods available using modern technology, more suited to the amateur or newbie chef:

    • Use a temperature probe food thermometer designed to be inserted directly into the turkey during the cooking process, as directed by manufacturers instructions. This continuously monitors the internal cooking temperature so you can be certain that the correct minimum temperature is achieved.
    • Use a thermometer (designed for the specific purpose) to register the internal temperature of your oven so as to check the accuracy of your ovens temperature controls.
    • When the turkey has cooked and has been removed from the oven, use an "instant read" probe food thermometer to check the internal temperature of various parts of the turkey e.g. legs, inner thigh, breast, internal cavity stuffing. The turkey should be allowed to rest for approximately 30 minutes after cooking and the internal temperature must be at least 165 F to ensure that the meat is cooked sufficiently well and safe to eat.

    Turkey cooking tips

    1. Some professional chefs suggest pre heating your oven to a much hotter initial temperature of 425 F ( 220 C ). Place your turkey in the oven and leave for approximately 15 minutes. Then reduce the temperature down to the correct range selected e.g. 325 F for the remaining time. The idea here is to give the turkey a good blast of heat which penetrates right into the meat and any stuffing.
    2. Consider cooking stuffing outside the turkey in a casserole.
    3. To protect the turkey breast from over-cooking and drying out, consider placing stuffing under the breast skin. You should carefully peel back the skin and work your fingers and then your hand under the skin to free it from the meat. Spoon the stuffing into the cavity and then replace the skin and secure down to avoid anything leaking out.
